So we all know that Foodie Friday has failed.

I think I was pretty ambitious about my ability to record my culinary adventures. Instead, you will get food when I actually post it.

Like Sunday night!

A little dose of healthy (-ish) to break up the rich meals and post-work drinks:
Harvest Cobb Salad with Poppy Seed Dressing. Yum!

Ain’t that adorable?! That is what a shortage on cooking supplies gets you. Salads in mixing bowls.
I am currently battling the need to store my modest cooking supplies and building a basic pantry of dried goods for easier meals, given that I have two cupboards to work with between the two options.

Either way, these cobbs were constructed with pears, honey crisp apples, pecans, bacon, goat cheese pieces, craisins, and cucumbers (substitute for the boiled eggs…I don’t like my salads to smell rotten). Craisins were a chore to find, but I succeeded.

And then Jimmy proceeded to pick everything except the cheese and bacon. He came up and said “Ugh, you aren’t one of those people who puts fruit on your salad, are you?”

Why, yes I am. And I am making your dinner, so yours will have fruit on it too. That is why I didn’t ask what you wanted for dinner tonight.

He ate everything separately, except the pear. Who doesn’t love pear?!

The dressing was super easy:

1/3 c mayo
1 tbsp poppy seeds
1 tbsp apple cider vinegar
1/4 c milk
mix, mix, mix.

I thought it was delicious, even if Jimmy didn’t appreciate the artistry.

Here’s to hoping these beautiful greens and fruits continue to be available all winter…..
